Every 500 years, according to Hutchinson's Encyclopaedia, the Oxford Companion to English Literature and several quotations in the Oxford English Dictionary.
However, there are usually more than one version of a classical myth, and so there may be other equally good answers.

There is only one Phoenix at a time; it lives for many years (accounts vary from 500, 540, 1000 or 1460 years.) This legend was very common among the Egyptians, the Greek, oriental cultures, and during medieval times.

Most sites say 500 or 1461.
