The word "vinegarroon" referring to the whip scorpion was used in the 2004 Scripps Howard National Spelling Bee. However, I've also seen it spelled with just one "r." Is that correct too?

The Oxford Dictionary records both spellings without indicating a preference for either. The latest quotations in the OED are from magazines. “Pacific Discovery” in 1948 spells the word with one “r”, “Scientific American” in 1978 uses two.
Earlier spellings are vinagron (the Spanish form of the word), vinegerone (in the Century Dictionary of 1889), vinegarone, and vinegrone.
