What are the correct ingredients and way to make both Welsh Rarebit and Spanish Omelettes?

I'm useless at omelettes but the Spanish variety is a doddle using Spanish onions and cooked potatoes in equal quantities, plus any of the following sausage, tomato, herbs, cheese etc.
Tortilla (spanish omelette)
2 tablsp olive oil
6oz onions, peeled and sliced
6oz cooked potatoes, peeled and cubed
1/2 tablsp chopped fresh herbs
6 eggs
Pre-heat grill. heat oil in pan until hot. Fry onions for 3 - 4 mins until translucent. Add potatoes and stir with onions till lightly browned. Beat eggs in a bowl till mixed but not frothy. Pour over onion and potato mixture and turn till amalgamated. Allow bottom to set. Add herbs and any two ingreds of choice. Place under hot grill till top is browned. Serve in slices directly from pan. Serves 2 as a main course.
This is how my Mum used to make Welsh Rarebit - and it's gorgeous.
Welsh Rarebit (Rabbit) Recipe
2 to 4 slices of bread
1½ cups of grated cheddar cheese
2 tablespoons of milk or beer
30 grams / 1 oz of butter
1 teaspoon of mustard
Pepper
Toast the slices of bread and grate 1½ cups of cheese. Arrange the cooked toast on a baking tray ready for grilling and spread with butter. Slowly melt the cheese and milk in a small saucepan. Then add the mustard and pepper. Stir continuously. When thick and smooth, pour over each piece of toast and grill until golden brown.
