What is the difference between apple cider and apple juice?

Apple juice is sometimes known as sweet cider, because it's not fermented. Ciders are fermented, and hard ciders have alcohol in them.

All cider over here is alcoholic. Varies from Woodpecker (2% and sweet) up to Gwatkins and Westons strong ones at 8% (and some even stronger - up to wine strengths). (Or the chemically White Diamond and such.) In the USA, all apple based drinks are called cider. In the UK, apple juice is ... apple juice. Easy to distinguish. (Although in the case of Woodpecker, I'm not so sure.) Seeing as the word comes from a root connected with intoxication, I can't really see any reason for applying (or appleing?) the term cider to anything that doesn't contain alcohol. If it's made from pears, it's sweeter because the sugars in pears won't all ferment, but it's called perry not cider.

Real cider is made from a different type of apple to the stuff you're meaning. They're not large round shiny things - they're often wizened looking, lumpy, and so acid you couldn't eat them. They're grown for cider only. Lots of varieties - only one I can remember at the moment is Foxwhelp. You can't buy them in the shops. Cooking apples are nearest in taste, but still a long way off. Don't forget there's a difference in terminology between UK and USA!

Yes you're right Baloo.
Apple juice is really just a fruit juice like orange or pineapple etc. Now Cider is something altogether different - and not for the fainthearted.
I remember a very ancient Aunt who made gallons of 'scrumpy' every year from the fallers collected from the ground in our orchard. She would grind them up and put the mash between two wheels, turn a huge handle and bottle the juice that emerged. I just allowed a teaspoonful of this lethal concoction!

Cider means a different thing in the states than it does elsewhere. We had many apple orchards around our last home, and cider was just a blend of juiced apples that generally had not been filtered, so that the color and taste were much deeper and richer. Generally apple juice has had most of the interesting things removed...it is light in color and transparent. Of course, these definitions may vary in different parts of the world.
