If sailors died at sea from lack of vitamins, then how have the Inuit and other northern people gone hundreds of generations with no fruit or vegetables in their diet?

The original, and now derogatory, name for Inuits gives us the clue.
Eskimo means "eaters of raw meat". Inuits eat raw whale blubber and skin which is high in vitamins, especially vitamin C.
So, truthfully, a carnivorous diet is what supports these people.
Also, they do have fruits and vegetables in the summer, when it is very hospitable up North. As you may know, Alaska is famous for its giant produce grown during the long months of near total sunlight.
