In one version, she gives King Arthur his sword, and in another he pulls it out of the stone. I think she's the one who reaches up and takes the sword back, after Arthur told his knight to go throw the sword in the water.

The Lady of the Lake was Viviane, also the mistress of Merlin.
Escalibore was drawn from the stone to mark the kingship of Arthur, the rightful heir to the throne. At least Escalibore is the name inscribed on the hilt. This sword is later referred to as Caliburn. This sword (if he is still girt with this sword at this part of the tale, as it is not mentioned by name often) is broken during a joust with an unnamed knight, at which time Merlin shows him to the lake, where the Lady offers up Excalibur.
Now, this information is taken from my Bulfinch's Mythology, which I rather like. It's hard telling whether the two swords, Caliburn and Excalibur, are indeed the same. Obviously, the names are similar enough that they may be assumed to be the same sword, with two different tales relating how they come into Arthur's possession, but that drifts somewhat from the question.
Viviane, the lady of the lake, is also responsible for the raising and education of Lancelot from infancy, having stolen him off the bank of the lake while his mother held his dying father.

The lady of the lake was the beautiful step-mother and teacher of Lancelot. Also, she was the mistress and assistant of Merlin.
After Morgan (sister of Arthur), stole excalibur and threw it in the lake so Arthur was no longer protected by its magic, he was killed and the lady of the lake gave excalibur to Lancelot. But by some accounts, Arthur was only mortally wounded and the lady of the lake passed excalibur back to Arthur, who gave it to Lancelot on his deathbed.

I think there's a 'wasn't' missing before 'mortally' there....
