This bizarre sport found it's place in World Sport Championships for the first time in 2002. In 2003, Toronto held the next championships. Considering this sport has no equipment, and no apparatus, which mind-numbingly boring sport could this possibly be?

No, you need a table for that.

You guys know it's a World Sport now, so how about stop the random guesses and try finding the answer?!

This is tricky. I think I've just ruled out yoga, tai chi and tic-tac (unlikely to have been a sport but you said jerky hand movements).
Is it either a dance or a martial art?

Oh darn it. They weren't there when I posted!

Oh, they were there when you 'posted'. ;)

But, had they not been there, I would have said that martial arts demonstrations and sparring events require a mat.

By "there" of course I meant my computer terminal where I hadn't refreshed the screen. :/
I'll accept the point about a mat!
