In music, what does one do if the music says "D.S. al coda"?

D.C. is short for "da capo" - "to the beginning [the head]" of the piece. D.S. means "dal segno" or "go back to the signal/sign". The "segno" or the point that one would usually go back to is usually marked as an "S" with two diacretic dots inside it. "D.S. al coda" means that one should return "dal segno" and play until the instruction is given to go to the "coda" or the ending.

The DS = Dal Segno which is a sign earlier in the piece of music which looks like an S with a forward slash through it (segno = sign in Italian) you go back to the sign and play through until the "to coda" sign: this looks like a crosshair (coda = tail in Italian) from the "to coda" you jump to the coda (same sign) which is often the end section.
