As much as I disagree with it, you should be using Veal.

You can also use Turkey for Orloff, it appears.

What makes you think I would let you anywhere near my kitchen...especially in the buff?

Although it is commonly used to disguise veal, it can be used for any other sort of meat that you may want to pretend to enjoy.

I found this online---I couldn't say it better myself:

"The dish was created in the nineteenth century for the veal hating Prince Orloff. To disguise the veal flavour, the delicate meat was literally bathed with two relatively overpowering sauces. If one detests veal, why have it in the first place and if one likes it, why mask its flavor?"

Overheard at a barbecue: Mr. Harold said, "Gee, Mr. Chef is really keeping the grill very hot. He's probably among those who erroneously believe that searing the meat will lock in the juices," to which Mr. Maillard reacted strongly, "Absolutely right! Searing the meat may be good for something, but certainly not for locking in moisture." Are they correct? If so, what good purpose does meat searing serve?
