In northern Europe there is a hotel that is demolished, if that the right word, and is re-built every year. Why?

Could this be the Ice Hotel in Finland? (Don't ask me to type out the location. I have enough trouble with typos as it is.)

OK, I've looked it up in a book now. It is at Jukkasjarvi, a Finnish sounding town in Swedish Lappland. The average room temps is minus 4 deg C. The beds are made of packed snow topped with reindeer skins. The hotel has 10 rooms accommodating 60 people. It melts every April which is a trifle inconvenient as it has to be rebuilt each winter. The hotel was first built in 1989 and gets larger every year.

...and right you are gmack, it is Sweden. I was awaiting lanfranco's response with the place name and she would have found it.
