Why does hot water clean dishes better than cold water?

All I know is that the hot water kills the germs and the cold doesn't.

In hot water, the particles are moving around really fast and bumping into one onother. I guess they are also bumping into the dirt and knocking that off as well.

Cold water hardens and congeals grease and sticky food substances, making them more difficult to release from the surfaces of dishes. Hot water has the opposite effect.

If the water isn't hot enough to burn you, it's not going to kill many germs.
