Same as it is for Eb major in any other form, starting at Eb and going up (on the piano): 2-1-2-3-4-1-2-3. For voilin fingering it's best to ask a fiddler.

Isn't a contrary motion scale played with both hands going in opposite directions? If so then if one hand is going up the piano then surely the other is coming down, or am I wrong about this?

Left hand (starting at Eb): 2-1-2-3-4-1-2-3, identical to the right hand fingering on the piano.

So how is it "contrary motion"?

Right hand plays the scale going up while the left hand plays the scale going down - the two hands move in opposite directions, hence contrary motion.
