Why is Rhode Island called an island when it obviously isn't an island?

The full official name is "The State of Rhode Island and Providence Plantations." The latter refers to mainland portions, while there really is a "Rhode Island," also called Aquidneck Island. For the sake of convenience, the name is simply shortened:
