What unusual means of transport is depicted by such painters as J.A.D.Ingres, Filippo Napoletano, Stefano della Bella and Eugene Delacroix - but not Arnold Böcklin - in their rendering of a scene from Ariosto's "Roland Enraged" in which an airborne knight rescues an angelic lady from the claws of a sea-monster?

Hippogryph indeed. In the "Galleria Nazionale delle Marche" at Urbino there is a painting of
Ruggiero helping Angelica dismount from the hippogryph, which might interest you.

I know it. I once wrote about it.
I've got a nice little Stefano della Bella of my own, but it depicts Perseus and Pegasus with the Medusa.
