Does the poem 'If' by Rudyard Kipling really define the man with capital M?

Yes.
"Man" in the last line of the poem is spelled with a capital M in the Oxford Dictionary of Quotations, in Cassell's Companion to Quotations, and in my paperback edition of Kipling's poems.
