What do the different colored lightsabers mean in Star Wars? I know Red means they are a Sith.

Well, not exactly. The colors of the blades, which as of the prequel movies (Episodes 1-3) are almost every color imaginable, are created by the energy-focusing crystals used during the construction of the weapon, and any Jedi is allowed to choose the color of their blade. Generally it is thought that the crystal will call out to a padawan learner. In the first three movies, ie episodes 4-6, there are only a few light sabres left at all, with red belonging to Darth Vader, and in Episodes 1-3 it is true that the significant Sith use red blades, but it isn't forbidden for a Jedi to use a red blade if they so choose, though I don't know of any cinematic examples of a Jedi using a red blade. Leah has used a red sabre in the "extended universe" that is made up of the sanctioned books and video games.
Anyway, some of the loose patterns of note are that blue sabres indicate a Jedi more intent on combat that the force, while green is the opposite and purple, being a combination of blue and red indicates that a Jedi has focused his education on combat but has gone and come back from the dark side to learn the special elements of Sith combat. Also, it seems that a higher percentage of certain stations of Jedi use certain colors, like blue with Jedi Guardians, Green with Consulars, Yellow with sentinels.
But still, the mythology associated with the colors of sabre is pretty vague as to any real and specific meaning.
