multiple camera shows switch both angles and shots quite frequently.

In single camera, the action takes place in front of one camera. It doesn't necessarily meant that the final production isn't edited. Mostly the director will hold long or medium shots to get the action of all the people on the set. At one point, the Odd Couple was the quintisential one camera sit com.
In multiple camera, the director has some versatility to show different camera angles, closeups, reaction shots. Your local evening news program is multiple camera.
