Where did the habit of eating only certain foods at certain times of the day come from, such as eggs, toast, cereal for breakfast instead of dinner?

I can't answer directly, but can say it is totally different in different countries. In the Netherlands they eat cheese for breakfast, in Denmark Danish pastries and smorgasbord, as they do in Sweden, in Britain we have the English breakfast, but in France they eat croissants. This is all from staying in hotels who provide what is typical of each country. But I often eat any of these for all but my main meal, so I suspect a customary influence, as apart from not eating a large meal at breakfast as your body hasn't woken up enough that early and would slow you down, you have one main meal (second or third) and two smaller ones. But what you have for the smaller ones is pretty optional and locally influenced.

Any Autralian I've ever known eats steak and eggs for breakfast, so I imagine it varies from country to country. It's largely a matter of what the body is able to handle first thing in the morning, and what's available locally.
