What differences in production make canned meat sold as pet food so much more odorous than meat sold for human consumption?

According to this site, low-quality scraps not fit for humans go into pet food, and these include rancid fats that create the odors many pet owners know so well. They also create digestive problems.
This site is a little polemical, since it advocates holistic pet care, but it makes sense that the quality and age of ingredients, plus the chemicals used to treat them, should affect the smell of the product:

Another difference is that many pet foods contain a high proportion of organ meats, which are quite smelly- think of liver, kidneys and tripe.
