I have read reports about the US military finding caches of weapons and then destroying them. Why would they destroy perfectly good weapons and not use them themselves?

Not all weapons are destroyed, a company called USA Enviromental Inc. collects captured munitions from U. S. personel,determines if they are servicable and destroys selected munitions.The remainder are stockpiled under U.S. control until further disposition is determined.

Besides, the Americans do not know how to use all of the world's weapons.

Another point is that if the arms are, say, of Russian or Czech manufacture, the Americans might not have ammunition to fit them. And the Pentagon wouldn't want to buy ammo off the Russians....

I feel certain that the US military isn't in need of any more weapons, nor would they wish to incorporate a foreign weapon into an inventory of parts that don't match. The most logical reason for destroying them would be to deny the enemy chances of recovering them.

Think of all the work it would take to stock pile these foreign weapons, run saftey checks on them and clean them, and then incorporate them into our military.
Its much easier just to blow them up.
