Why are counties in Louisiana called parishes?

Probably because Louisiana was greatly influenced by the French legal system as opposed to the rest of the states that were influenced by the English.

Countys and Parishs are terms from Britain, a parish in most of Britain means the smallest unit of local government - a small group of villages or one small town normaly make up "A Parish", the term has religeous meaning too - before democracy in the middle ages, parishs were run by the clergy (priests) and the local hirrachy. Many American terms obviously stem from England, Scotland and the rest of Britain.
