    The dialect of where I come from calls this pasta shape 'filey' (filej) and is always served in a fiery hot sauce called N'duja. Classical Italian refers to this pasta shape as something that is supposed to choke a clergyman. What is it called?

    There are a good many recipes on the web, and I'm sure they all disagree with each other, so I won't post a reference.

    Yay TT, and yes, they are 'priest chokers'. Filej also resemble a half rolled up towel, and are usually served fresh, not dried.
