He is Saint James the Great. His burial place is confused with Priscillian of Avila. His emblem is the scallop shell (white). The courageous day was battle of Clavijo where he fought the Moors. The military Order of Santiago was founded to fight the Moors and their emblem is a red cross of St. James with with lower part fashioned as the blade of a sword blade.

Yes, teash, it is St. James. There are a few alternative stories existing where he rescued a knight who was covered in scallops, and/or a horse that has fallen into water and was covered in scallops...
What do we know about the red ones? That the red/orange roe of a scallop is actually a female and that the white roe ones are male.
