This type of art is condsidered relatively new and is performed by tradepersons named after a new English word derived from the Italian language. Involving the by-products of certain farm animals, it is now portrayed at a competition level. What is it, who performs it, and can you provide some pictures of these interesting works of art?

I suppose it is "Latte art", performed by baristi (possibly "baristas" in English), which involves decorating cappuccini ("cappuccinos").

Funnily enough, "latte" only means milk in Italian.
This kind of art has long been performed in Italy by any average bar. Some, of course, are better than others: in Rome, a great place to see cappuccino decorations used to be the café in front of the Ministry of Justice, in via Arenula.

There is an interesting link at the bottom of the page showing some fascinating designs. Having the opportunity of having unlimited access to an industrial espresso machine, I've experimented myself a number of times, creating somewhat interesting results----the trick is the delivery of the milk to the cup with the use of a spoon and a toothpick.
