Why does ones hair return to being curly after it's been straightened and exposed to water?

I wish my hair would return & I would be quite happy to accept it curly or straight.

becuase when its wet, it is relaxed and the molecules expand, when it dries they contract

It's all to do with the salt bonds and Hydrogen bonds(ionic) breaking and reforming into a new position within the hair cortex. Styling your hair(straightening) with a hairdryer breaks and reforms these bond into a new shape. Once water hits it, they are broken again and reformed.
Chemical reformation (perming and straightening) affects the cystine bonds. (also known as the disulphide bonds) Through the process of applying the solution to the hair to permanently change the polypeptide chains, and the neutralizer to replace the oxygen molecules, this results in the changed 'style' for a period of about 2-3 months.
