In "Pirates of the Carribean: Curse of the Black Pearl" it shows that Barbossa died. But in "Dead Man's Chest", it shows him alive. Did he really die in the first movie?

It is assumed that all of this will be explained in the next movie which is to be released next year.

Apparently not.

This is probably wrong but I think that he made a deal with that fortune teller woman and my dad thinks that he took a coin out at the last minute of the fight which is clearly wrong because he is bleeding.

Also, he seems to be enjoying that apple when he bites into it. :P

If you watch the additional scene at the end of the credits in the first movie,"Curse of the Black Pearl", it shows Barbosa lying there (dying)and then the monkey taking a coin out of the chest. The monkey immediately becomes a skeleton in the moonlight. That's why he is still like that in "Dead Man's Chest" and Captain Jack keeps shooting him, but he doesn't die. This gives a hint that Barbosa could have either also taken a coin out of the chest, or the monkey could have taken a coin and given it to him before he died, therefore turning him into one of the undead again. JMHO.
