    CHEDDAR is the most popular variety of cheese made in the world. It originated in the village of Cheddar in Somersetshire, England, in the latter part of the 16th Century. Cheddar is a hard cheese, ranging in color from nearly white to yellow. The white Cheddars are popular along the Northeast coast of the United States and Canada, while the yellow colored Cheddars are popular in the rest of the Midwest, South and Western U.S. Cheddar cheese can be eaten from the day it is made in the form of cheese curds or it can be aged for up to three years and enjoyed as a pungent extra-sharp.
