Because trees work slowly, on the whole. Plants like bamboo can grow rapidly, but to make a strong tree trunk takes a lot of work. Some grow quicker than others - the dreaded leylandii for one. Others grow very slowly. Look at a tree catalogue and see the 'height after ten years' quoted. Some are only measured in inches. That doesn't mean they stop after ten years, as people find out when they put them in their gardens. Basically, if it didn't take years to be fully grown, and have a wooden trunk, it wouldn't be a tree.

Some trees grow very fast and reach full height quickly. For Instance, the Chinese Elm (Ulmus parvifolia) can reach 30 feet tall within 5 years and ultimately grow to a height of 40 to 60 feet.
