I think I've found one:
On the campus of the Academy for Academic Excellence (Apple Valley, CA) there exists an oxbow lake. It is actually an extension of the Mojave River itself and exists because of the beaver dams that encircle one side of it. http://digital-desert.com/mojave-river/

There are a bunch of oxbows in CA. Many along the Sacramento River.
