Hospital tradition dictates that all workers wear white uniforms, whether they're doctors or nurses, so that you can see that they are clean. In recent years, surgery theatre staff changed to green, as it acts as a contrast to the red of blood.
Normal doctors receiving patients in a private practice do not wear white coats.

Sorry about the "normal" reference. I was going to say "GPs" but I didn't know whether that term is understood in the United States.
