This is probably the Archimedes Palimpsest Project, developed at Stanford to reveal seven treatises by Archimedes that were hidden in a parchment recycled by monks to write a prayer book on it.
The scientist is Archimedes (Syracuse, 287-212 BC) and the word is certainly "eureka" ("I've found it").
The second term is palimpsest, that derives from the Greek word "Palimpsestos", meaning "scraped again".
