Chinese: "But dog meat is called 'fragrant meat' and is the only name of any meat that I know of, and I know nearly all of them, that does not use the animal's name."

It is my understanding that this term is actually referring to what Asians commonly have referred to as dog meat. It is considered illegal in USA. http://www.urbandictionary.com/define.php?term=fragrant+meat

Searing the meat may be good for something, but certainly not for locking in moisture." Are they correct? If so, what good purpose does meat searing serve?
