How do you get white asparagus?

Same way you get white leeks - earthing up. You built up the earth (or sand round here) against the growing stem and it doesn't go green as it gets no light. Incidentally, if you want a really back-breaking job, try asparagus cutting. You have to cut it at or just below the surface of the soil (for normal green) or well down for white. (I've seen the job being done, as I live in an asparagus growing area. Not as much of it as there used to be, but the local asparagus still fetches one hack of a price...)
