Wendy, if you read a little further on your site, it claims 613 (5 knots and 8 strings/cords) to equal the 613 Commandments of the (Old Testament) Torah.
I'm pretty sure Arppy will sort this one out, though.

Peasy, you got that one just right. No further explanation is needed.
Though I think at times the rabbis of the Talmud went a bit overboard to try and make their numbers fit, the generaly accepted wisdom among the Jewish people is that the "tzitzit" (literally "little fringe") which was to be sewn on the corners of a garment stands for the commandments of the Torah.
