    This sounds like "duxelles," except that according to this site and one other I examined, the inventor was supposedly the gentleman's chef, Francois La Varenne:

    Have to give to le sieur de Varenne what is due to him. The marquis d'Uxelles only had the sauce invented for him. Duxelles sauce was not the only creation of his cook. http://en.wikipedia.org/wiki/Fran%C3%A7ois_Pierre_La_Varenne
