Which Biblical creature means in the Hebrew "twisted"?

Nope, that's not it. "Leviathan" has absolutely nothing to do with twists and turns. (The spelling is close enough to suggests that it comes from the same root as Levi, to accompany.)
However, the name Naphtali does indicate twisting, as does the word "sh'fifon" - a poetic word for snake, which is used in Genesis 49:17. Some linguists will also say that "tanin" (a sea reptile, aligator in modern Hebrew) also refers to twisting.

By the way, in modern Hebrew, Leviatan is the word for whale. The phrase in Isaiah refers to two different types of "leviathans", one of which is the "winding snake" variety.
