In many cases of professional recordings, a demo is usually made in the studio, prior to the version that would be used for release. Sometimes the producer, for whatever reason, will use the earlier take of the song for release. Sometimes it's because the vibe on the release is stronger than what they could capture on the versions meant for release, other times there wasn't enough time to make good recordings of the songs that were demoed, so the producer would equalize the recording and try to make it sound as best as they can, maybe add some embellishments, and some overdubs to clean it up, and the demo is released as the product.
Unless the artist or producer comes out and says that they used the demo, there's really no way of telling what songs were released as demos and which were not.
However I can say that the song "Forever" recorded by Kiss reaching #8 on Billboard in 1990 was a demo. All the songs on Hot in the Shade, released in 1989, were spruced up demos.
