The wife of the Prince of Wales is, by courtesy, Princess of Wales -- Camilla Parker-Bowles Windsor currently.

She is not a princess in her own right.

And what about her calling herself Duchess of Cornwall? Does that make any difference?

Lots of folks have multiple titles -- QE II is also "Duke of Normandy" after all ...

As the consort of the Prince of Wales, Camilla is legally the Princess of Wales; Clarence House has announced that she is officially styled HRH The Duchess of Cornwall. This is mainly because the former title was so closely identified by the public with her husband's first wife, the late Diana, Princess of Wales.

She doesn't just call herself Duchess of Cornwall - she IS the Duchess of Cornwall. Because she is married to the Duke of Cornwall, she has the title Duchess. She is also Countess of Chester, and something or other of Rothesay and of Carrick for the same reasons.

From a strict legal application, the wife of the Prince of Wales is the Princess of Wales. Camilla, therefore, is the current Princess of Wales. However, due to the enormous affection the British people have for the late Diana, Princess of Wales, she is is known by another title, Duchess of Cornwall.

To declare her Camilla, Princess of Wales would have gone down like a lead balloon and could have resulted in a massive backlash against the royals, unlike any seen in recent memory.

Another title wasn't hard to find. It is not uncommon for royals to have several aritocratic titles. Charles, as well as Prince of Wales, also holds the duchy of Cornwall.

Camilla as the wife of the prince of Wales could use the title Camilla, Princess of Wales, just as Diana was Diana, Princess of Wales. Camilla choses not to use that title and uses another instead. Neither of them would be Princess xxxx of Wales. Princess Mary of Wales was entitled to use that title, as she was a princess to begin with. The Welsh title is linked to the male son of a reigning monarch, and there would not be a princess of Wales in her own right unless the system was changed. Oddly enough, the title in Welsh appears to be the same whether the wife of the Prince is a princess in her own right or not. The Prince of Wales is Twysog Cymru, and the Princess is Twysoges Cymru. (Sources: all over the place! My research for another Twysoges in another land altogether. Don't ask.....)
