Which specific occupation would require staff to have a haircut prior to each rostered day at work, spend almost the same time preparing to go to work than the average person spends at work, and has to have the ability to remember categorical knowledge of their surroundings including the whereabouts of the items (about 100) that they are in trust of?

The continuity person involved with the making ofa motion picture. They require the actors to have their hair trimmed the say way so that if there is time off between shoots for the same scene, the actor's hair would appear the same. The continuity person would spend hours detailing each scene so that when the director says "places," the actors know exactly where to stand and how the surroundings appear. When the continuity person screws up, it's totally noticeable in the film. If in one shot of a scene an actor is not wearing a tie, and in the next shot of the same scene, all of a sudden the actor has magically put a tie on without going to a mirror or physically tying a tie.

Nice try, but no.
The 100 mentioned is probably pretty accurate and will indeed help to obtain the answer with this one.

This description fits the job of the guards at the Tomb of the Unknowns in Arlington National Cemetery. Scroll down to "Dedication".
In the interests of fairness, I should admit to everyone else that peasy provided me with a behind-the-scenes hint that confirmed my suspicion that this occupation involved the military.

That job came to my mind, too, but I found they were responsible for knowing about 175 interred people, not 100.
It's down toward the bottom here--

where I looked about a year ago when a friend sent me the email Snopes clarifies.

Yes indeed Frankie. Actually robboy had it first in a behind-the-scenes stab, and it was a mention of him that gave Frankie her boost.
Perhaps a Golden Banana for my pals robboy and Frankie to share. Enjoy. *
