What makes rice a "pilaf?"

In my household, a pilaf or pilau can involve a variety of ingredients. You can make a side dish with rice or a grain, adding raisins, nuts, onion, meat or poultry broths, even chopped hard-boiled eggs.
You can also prepare a main dish by adding all of the above and chopped meat, poultry, or fish. Herbs and curries and a variety of other seasonings may also be added.
I generally think of pilaf/pilau as Asian, especially South Asian, but, of course, rice and grain dishes are universal.

Southerners call it "perloo," though it's a simpler dish. Find Perloo, Pilaf, Pilau on this page.

Some authorities equate the terms while others say perloo, which I'd thought was spelled "pearlo" until now, is a different recipe. At covered dish suppers in North Florida, "chicken perloo" was simply rice cooked in chicken broth with small pieces of meat. There are much more elaborate recipes, however.
