The Roosevelt elk is endangered in many areas of North America, although in some areas, it has made a comeback. They were almost extinct in the early part of the century. So, Theodore Roosevelt is the former head of state.
There could be more than one example of an endangered species named after a head of state though. http://www.roadtripusa.com/routes/pacificcoast/california/pac_prairiecreek.html
