Just for the record. So as not to disparage only one Religious sect, The Holy Bible speaks of these Giants as well.
" Amos 2:9 "I destroyed the Amorite before them,
though he was tall as the cedars
and strong as the oaks.
I destroyed his fruit above
and his roots below. "

That's merely the same sort of poetic description that you find in Egyptian and other inscriptions celebrating someone's achievements ('I went forth to battle and my enemies fell as the corn falls before the reaper; thousands, nay, tens of thousands I slew on that day.' The king never even left his capital, and the nearest he got to a battle was reviewing the troops.) I am finding it difficult to visualise an 'ancient Muslim economist'. Economists are a modern phenomenon as such. While various ancient writers did touch on economics, it isn't until around 1700 that it really became a widely discussed subject.

The Bible speaks of Giants non-metaphorically and without Artistic License in Samuel 21:16-22 and 1 Chronicles 20:4-8.

I don't think so.
First, to clarify the question, we don't usually call anything or anyone "ancient" that happened/lived/wrote before c. 500 CE or the fall of Rome, so there couldn't be a truly ANCIENT Muslim economist.
I have googled "Mohammedan scholar" with some poor results including references to a pre-Adamite race.
