What species of shark is being hunted to extinction in order to satiate the hungry appetites of shark-fin soup gourmands?

Gourmets, please. Gourmands are excessive eaters, or gluttons. The word is being incorrectly used nowadays to refer to people who take pleasure in good food, for whom there is already the perfectly good word gourmet. It is possible to be both, but to gourmandise on soup would be very odd.

I used gourmands purposefully - meaning insatiable pigs...you can tell by my sarcastic comments of eating the sharks out of existence.
A gourmet would know there is only one species of shark that was used originally to make the real shark-fin soup. A google search reveals that all 400 species of sharks are used. A gourmand wouldn't care where the cartilage came from - or the correct species of shark.
