What do the extra numbers on the American NFL uniforms mean? For example, the Denver Broncos have 21, 27 and 29; the Redskins have others.

In the case of the Broncos specifically, for the 2007 season, members of the Denver Broncos memorialize fallen teammates Darrent Williams (CB, 2005-2006) and Damien Nash (RB, 2006) who both passed unexpectedly this past off-season. The players don a white circular sticker on the rear of their helmets with the imprinted numbers 27 and 29—representing Williams’ and Nash’s uniform numbers. The sticker is placed on the left side of the helmets, immediately above each player’s own uniform number identifier.

Right. The rule is that teams are permitted to wear the number of a fallen teammate for the season after his death in his memory. But because Redskins player Sean Taylor was killed during the season (in a home invasion burglary), everyone in the league wore a #21 sticker in his honor one week this month. That's why Denver had 21 as well as 27 and 29 when you were watching.
The New England Patriots wear #91 to memorialize Marquise Hill, who died in a jet-skiing accident during the off-season.
