I read a book years ago about a man who was part god or godlike, or may have even been alien. He had the ability to heal himself and could grow new limbs and organs. I remember in one part, he was in ancient Mexico and was about to be made a human sacrifice. He grew another heart in a different part of his body and when the priest cut out his other one, he was able to survive. He then stood up and really scared the priest. I know this sounds strange, but does anyone remember the name of the book?

That sounds like one of the books in a series by Barry Sadler, the man who sang Ballad of the Green Berets. The main character in the books was originally named Casca, and he was one of the Roman soldiers at the crucifiction.
The series is called The Eternal Mercenary, and each one featured Casca in a different time in history. He could not be killed, so he was always able to heal any wound he suffered, but he could be scarred.

Casca: God of Death sounds like what you are looking for: 252 A.D. - Beginning of Casca: God of Death.
