    In French, what is Épistolière?

A épistolière is a woman who writes letters

A writer who excels in the art of letter writing.

Cicero, Descartes and Erasmus are all "épistoliers", so the art of letter writing is not the sole domain of women.

"Epistolary" is an adjective in English.
In current parlance, the equivalent of an épistoliér/-iére would be a correspondent, which is a dry word that does not reflect the French original.

I don't hear it used often with regards non-liturgical material, but a more useful word would be "epistolist". The writers of the epistles in the Bible are called epistolists, but John Milton is also rightly described as an epistolist, as in the link below.

My Webster's mentions both "epistolist" and "epistoler".

But maybe the "epistoler" is just he who reads from the Biblical epistles in Anglican churches, not the one who writes them?

By the way, there are also epistolary novels - novels written as letters - but I don't know the English word for "épistolier" (male) and "épistolière" (female).

You don't call him or her "epistolary", do you?

Would you settle for an American francophone?
I assure you that epistolists exist in both genders. In French, the male one is called (un) épistolièr and the female one is called (une) épistolière.
Author is right when he mentioned that epistoler in English means the reader of an epistle and not the writer.
In french, we call that person (un)lecteur/(une)lectrice, literally meaning "reader", as in the reader in the celebration of the Holy Mass.

Which popular French little cake is often linked with the genesis of a famous French novel, and was invented by the pastry cook of either a deposed Polish King from 18th century, or of a famous French diplomat in the 19th century, and in what commune of French Lorraine is it traditionally made?

A famous French chef and founding father of French cuisine invented an icecream for which almond icecream was combined with white currants, lemon sherbet, and half a peach. He gave it the name of a 19th century French opera that was famous at the time. Later the white topping was replaced by a brown chocolate sauce, which made the name a little irrelevant and absurd. What was the name of the opera and who was this superstar among French cooks?
