Nope, Lochalsh, King Edwards are one of Britain's favourite potatoes, and good for just about anything you want to do with them. I think they "went out of fashion" (food fashion? sad) for a while, but they're coming back into favour, and they deserve to.

Roasted? Yes, parboiled then oven-baked in the hottest possible oil or fat till they're golden brown and crispy on the outsides, light and fluffy on the insides. Nice.

Thanks, Deunan - congrats will be passed on, and I'm glad you agree about the keeper. I can't imagine many people, of any age but certainly not young ones, doing what she did.
Today is good, thank you - every day is just a bit better than the day before. I'm down to about one codeine and one or two paracetamols a day, and am looking forward to being off painkillers completely in about a week, with luck. I am so happy to be able to do stairs like a grown-up again. Two at a time? In my best dreams. :) |

The "roasted" was in response to what I thought you were going to do with cigars. I know potatoes can be prepared that way!

Good morning sweet Lesley, it is raining here, we are agog, havn't seen any in so long had almost forgotten. Carol and I had taken fluffy for a walk and were about two blocks from the house when the rain came, we got drenched, but it was heavenly. Raised my spirts and I know the okra needed a drink. Tell Johnathan for me congrats. Nice gentle hugs to you from me.

That's a relief.
There was a news story years ago about a man who smoked every cigar in his collection, then claimed on his domestic insurance because they had been damaged by fire. I don't think the insurers took him very seriously. They didn't charge him with attempted fraud - they just told him to go away. :| |

wow Lesley does not seem like a year am glad Jonathan has found a nie girl.
The best potatoes for roasting and chipping are maris piper also good for mash as well i learnt a lot about pots when i worked in a chippy, Desiree a red is also good for roasting but not mash and is good chips, is odd as i can tell the difference as well,

Ooh when did you work in a chippy?
Anything beginning with Maris is good, specially those little ones you can boil in 20 minutes. Desiree make brilliant chips and roasties, but didn't you find that they're very dense and seem to need much longer, gentle cooking?
I don't know where Vivaldi came from, but they seem to have sunk without trace. They were hyped as buttery. How about tasteless? A couple of years ago, I was in a supermarket and wanted Edwards, but there weren't any. The management gave me a big bag of Vivaldi to try. That should have told me that nobody wanted to buy them.
We're doing well considering that a few years ago all we knew was reds, whites and Edwards. |

Lesley long story regards working in Chippy but basics was i was in bedsit so lived on chips. A greek chap took over and we got quite friendly me him and his wife and he offered to teach me the trade so took him up on it.
He was taught by his father in law who was best fish n chips in bridgenorth, I worked for him for 2,5 years until my asthma prevented me carrying on. However on one occassions he had trouble in shop and his wife was pregnant and was busiest day friday tea time so i took over the running of thigs whilst she was taken to hospital, cut a long story short his fatehr in law offered to bank roll me in a shop of my own as he thought i was a better fryer then hos son in law des. I did enjoy it and learnt a lot about potatos etc.

You don't have to put a cauldron of boiling oil in the oven. Here is someone who has learnt to roast two pounds of potatoes in two tablespoons of goose fat, which could just as easily be two tablespoons of any other fat or oil - or even a coating from an oil spray.

| Gary, you'd have to learn a lot about potatoes if you were running a chippy. But you didn't say - did you accept the FIL's offer to set you up in your own shop? or just smile at the compliment and leave them to it? |

My health dictated i said i thank you most graciously but whilst my health is as it is i could no do it justice so turned down his most gracious offer. The most embarassing thing about it all was his FIL told him in front of me albeit in Greek that i was a better fish fryer then him.

Hmm. Embarrassing. Many years ago, my cousin and her husband came to stay for the weekend, and I cooked all the meals. One dinnertime, we were sitting round the table happily scoffing, when he turned to her and said "Why can't you cook like this? OUCH!" as he clutched his freshly-kicked ankle.
Actually - and this is totally irrelevant - the weekend went well till Sunday. They wanted to go to the local Sunday market. I stayed to cook lunch, which would be ready at one o'clock, and my husband never wanted to go anywhere anyway, so off they went. They got back well after two o'clock and said they weren't hungry because they'd eaten a whole pile of chocolate bars. (She's the one I don't talk to now.)
