1 (15 ounce) container of ricotta cheese
1/2 cup grated parmesan cheese
2 eggs
2 (26 ounce) jars pasta sauce, any flavor
1/2 (1 pound) package lasagna, uncooked
1 pound italian sausage (or hamburger) cooked and drained
2 cups (8 ounces) shredded mozzarella cheese
Chopped parsley

Preheat oven to 350*F. In medium bowl, combine ricotta cheese, parmesan cheese and eggs; mix well. In 13x9 inch baking dish, spread 1 cup pasta sauce. Top with half each of the uncooked lasagna noodles, ricotta cheese mixture, sausage (hamburger), remaining pasta sauce and mozzerella. Repeat layering. Top with parsley. Cover tightly; bake 1 hour. Uncover, bake additional 15 minutes or until hot and bubbly. Let stand 15 minutes before serving. (Don't forget the cover tightly part or it wont come out right, some tin foil does just fine.)

Good lord, sounds like a delicious recipe...but also a tortuous one on the arteries!

Molly, have you ever made it with meatballs? I make mine the size of marbles (cook/bake them first)
and sprinkle them on the layers.

Jazz,if you're worried about the fat, you can lowfat/nofat cheeeses in place of, or use half nofat and half regular cheese.

You could also use cottage cheese in place of the riccota, too. I place mine in the food processor and whip it up.

It's funny, I'm only worried about fat and cholesterol when I read about food. But when it arrives on my plate, the worries seem to disappear.

Say Pinhead...how about a regular thread where people can post their favorite recipes, etc.?
