Part of the recipe for making nougat........While the egg whites are being beaten, continue to cook the rest of the sugar syrup until the thermometer reads 315 degrees. Monitor the syrup carefully, as it can quickly overheat and burn near the end of the cooking process.

325: "Tales from the Vienna woods" is a waltz by Johann Strauss II and is his opus 325. This piece was dedicated to Prince Constantin Hohenlohe-Schillingsfurst, and was premiered at his palace during 1868.
