Native Texan Dan Rather was the anchor of CBS Evening News from 1981 to 2005. For one week in 1986, he finished his broadcast with the single word "Courage." Commenters indicated it was likely an attempt to create a memorable tagline for himself, like Walter Cronkite's "And that's the way it is..." Rather used it again for his final appearance as anchor on the show, this time applying it to people affected by the 9/11 attacks.

Before she became a chef, native California Julia Child joined the war effort and served in intelligence during World War II. After she married Paul Cushing Child, who was part of the Foreign Service, she moved to Paris where he was stationed. That is where she learned to cook French cuisine, and she brought it with her in the form of cookbooks and television cooking shows when they returned to the U.S.

The quote about wine has been attributed to Julia and certainly reflects her wit.
